Creamy Chicken Sausage Orzo

1 lb (450g) chicken sausage, sliced

1 cup (200g) orzo pasta

3 cups (720ml) chicken broth

1 cup (240ml) heavy cream

1 cup (150g) cherry tomatoes, halved

1 cup (75g) fresh spinach, roughly chopped

1/2 cup (50g) grated Parmesan cheese

2 tablespoons olive oil

1 small onion, finely chopped

3 cloves garlic, minced

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh basil leaves for garnish

Sauté the Sausage: In a large skillet, heat the olive oil over medium heat. Add the sliced chicken sausage and cook until browned and heated through, about 5-6 minutes. Remove the sausage from the skillet and set aside.

    Cook the Aromatics: In the same skillet, add the chopped onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and Italian seasoning, cooking for an additional 1 minute until fragrant.

      Add the Orzo: Pour in the orzo pasta and stir for about 1 minute to lightly toast the pasta. This enhances its flavor.

        Add the Broth: Slowly pour in the chicken broth, stirring to combine. Bring the mixture to a gentle boil, reduce the heat to lower and cover the skillet. Allow it to simmer for about 10-12 minutes, stirring occasionally, until the orzo is al dente and the liquid has mostly absorbed.

          Stir in Cream and Vegetables: Reduce the heat to low and stir in the heavy cream, cherry tomatoes, and chopped spinach. Cook for another 2-3 minutes until the spinach wilts and the tomatoes soften.

            Combine and Finish: Add the cooked chicken sausage back to the skillet and sprinkle the grated Parmesan cheese over the top. Stir until everything is well combined and the cheese melts into the creamy sauce. Season with salt and pepper to taste.
