8 oz (225g) pasta (such as fettuccine or penne)

2 tablespoons olive oil

1 lb (450g) boneless, skinless chicken breasts, sliced into thin strips

3 cloves garlic, minced

5 oz (140g) fresh spinach

1 cup (240ml) heavy cream

1 tablespoon Dijon mustard

1 cup (100g) grated Parmesan cheese

Salt and pepper, to taste

Red pepper flakes (optional, for a kick)

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve ½ cup of pasta water, then drain and set aside.

    Sauté the Chicken: In a large skillet over medium-high heat, add 2 tablespoons of olive oil. Once hot, add the sliced chicken breasts. Season with salt and pepper. Cook until golden and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

      Prepare the Sauce: In the same skillet, reduce the heat to medium and add minced garlic. Sauté for about 30 seconds until fragrant. Then, add the fresh spinach and cook until wilted.

        Make it Creamy: Pour in the heavy cream and stir in the Dijon mustard. Let it simmer gently for 2-3 minutes, allowing the cream to thicken. If the sauce is too thick, gradually add reserved pasta water until the desired consistency is achieved.

          Combine Everything: Return the cooked chicken to the skillet and add the drained pasta. Toss together until everything is coated in the creamy sauce. Stir in the grated Parmesan cheese until melted, and season with additional salt, pepper, and red pepper flakes if desired.
