Creamy Chicken and Spinach Pasta Bake

8 oz (225 g) penne pasta

2 cups cooked chicken, shredded or diced

1 cup fresh spinach, chopped (or 1 cup frozen spinach, thawed and drained)

1 cup ricotta cheese

1 cup heavy cream

1 cup mozzarella cheese, shredded

1/2 cup grated Parmesan cheese

3 cloves garlic, minced

1 teaspoon Italian seasoning

Salt and pepper to taste

1 tablespoon olive oil

Fresh basil, for garnish (optional)

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Pasta: In a large pot of salted boiling water, cook the penne pasta according to package instructions until al dente. Drain and set aside.

      Sauté the Spinach: In a large skillet over medium heat, add the olive oil. Once hot, add the minced garlic and sauté for about 1 minute until fragrant. Add the chopped spinach (if using fresh) and cook until wilted, about 2-3 minutes. If using frozen spinach, simply heat until warm.

        Combine Ingredients: In a large mixing bowl, combine the cooked pasta, shredded chicken, sautéed spinach, ricotta cheese, heavy cream, 1/2 cup of mozzarella cheese, Italian seasoning, salt, and pepper. Stir until everything is evenly combined.

          Prepare for Baking: Transfer the pasta mixture to a greased 9x13-inch baking dish. Sprinkle the remaining mozzarella cheese and the Parmesan cheese evenly over the top.

            Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the cheese is bubbly and golden brown.
