1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

2 cups fresh broccoli florets

1 medium onion, diced

2 cloves garlic, minced

1 cup chicken broth

1 cup heavy cream

1 cup shredded cheddar cheese

2 tbsp olive oil

1 tsp dried Italian herbs (oregano, basil, thyme)

Salt and pepper, to taste

½ cup grated Parmesan cheese

2 cups cooked rice or pasta (for serving, optional)

Instructions
 

Sauté the Chicken: In a large skillet, heat the olive oil over medium heat. Season the chicken pieces with salt, pepper, and half of the dried Italian herbs. Add the chicken to the skillet and cook until golden brown, about 5-7 minutes. Remove the chicken from the skillet and set it aside.

    Cook the Vegetables: In the same skillet, add the diced onion and minced garlic. Sauté until the onion is translucent, about 3-4 minutes. Then, add the broccoli florets and sauté for an additional 3-4 minutes until they are bright green and tender-crisp.

      Make the Creamy Sauce: Pour in the chicken broth and bring it to a simmer. Stir in the heavy cream and the remaining dried herbs. Let the mixture cook for about 2 minutes until it starts to thicken slightly.

        Combine Ingredients: Return the cooked chicken to the skillet. Stir in the shredded cheddar cheese and grated Parmesan cheese. Mix well until the cheese is melted and the sauce is creamy. Allow everything to simmer together for about 5 more minutes. Taste and adjust the seasoning with salt and pepper if needed.

          Serve: Serve the creamy chicken and broccoli mixture over a bed of cooked rice or pasta, if desired. Garnish with additional grated Parmesan or fresh herbs if desired.
