Creamy Cauliflower Mac & Cheese

1 medium head of cauliflower, cut into florets

8 oz elbow macaroni (or gluten-free pasta)

2 cups sharp cheddar cheese, shredded

1 cup mozzarella cheese, shredded

1 cup milk (whole or plant-based)

1/2 cup cream cheese, softened

1/4 cup grated Parmesan cheese

2 tbsp unsalted butter

2 tbsp all-purpose flour (or gluten-free flour)

1 tbsp Dijon mustard

1/2 tsp garlic powder

1/2 tsp onion powder

Salt and pepper, to taste

1/4 cup breadcrumbs (optional for topping)

Fresh parsley, chopped (for garnish)

Instructions
 

Cook Cauliflower: In a large pot of boiling salted water, blanch the cauliflower florets for about 4-5 minutes until slightly tender. Remove with a slotted spoon and set aside. Keep the water boiling for the pasta.

    Cook Pasta: Add elbow macaroni to the same pot of boiling water and cook according to package instructions until al dente. Drain the pasta, reserving a cup of pasta water, then set aside.

      Make Cheese Sauce: In a large saucepan over medium heat, melt the butter. Add the flour and whisk continuously for about 1 minute to create a roux. Slowly whisk in the milk and bring to a simmer.

        Add Cheese: Once the milk is heated, reduce the heat to low and whisk in the cream cheese until melted and blended. Gradually add the cheddar and mozzarella cheeses, stirring until the sauce is creamy and smooth.

          Season the Sauce: Stir in the Dijon mustard, garlic powder, onion powder, salt, and pepper. If the sauce is too thick, gradually add some reserved pasta water until desired consistency is reached.

            Combine Ingredients: Add the cooked macaroni and cauliflower florets to the cheese sauce, stirring to coat evenly. Taste and adjust seasoning if necessary.

              Prepare for Baking (optional): If you prefer a baked version, preheat your oven to 350°F (175°C). Transfer the mac and cheese to a greased baking dish, sprinkle the top with breadcrumbs, and a little extra cheese if desired.

                Bake: Bake in the preheated oven for about 20-25 minutes or until the top is golden and bubbly.
