1 medium head of cauliflower (about 4 cups, chopped into florets)

8 oz elbow macaroni (or any pasta of your choice)

1 cup sharp cheddar cheese, grated

1 cup mozzarella cheese, shredded

1/2 cup cream cheese, softened

2 cups milk (whole milk or a plant-based alternative)

3 tablespoons butter

3 tablespoons all-purpose flour

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

1/4 cup breadcrumbs (optional for topping)

Fresh parsley, chopped (for garnish)

Prepare the Cauliflower: Bring a large pot of salted water to a boil. Add the cauliflower florets and cook for about 5-7 minutes, until tender. Remove with a slotted spoon and set aside. Reserve the boiling water for the pasta.

    Cook the Pasta: In the same water, add the elbow macaroni and cook according to the package directions until al dente, usually about 8-10 minutes. Drain and set aside.

      Make the Cheese Sauce: In a large saucepan, melt the butter over medium heat. Add the flour and whisk continuously for about 2-3 minutes until it forms a roux (a light golden paste).

        Add Milk and Spices: Gradually whisk in the milk, ensuring there are no lumps. Continue to cook, stirring frequently, until the mixture thickens and is smooth, about 5-7 minutes.

          Incorporate the Cheeses: Lower the heat to medium-low, and add the cream cheese, garlic powder, onion powder, smoked paprika, salt, and pepper. Stir until the cream cheese melts into the sauce. Gradually add the cheddar and mozzarella cheeses, stirring until completely melted and creamy.

            Blend the Cauliflower: In a blender or food processor, combine the cooked cauliflower with a splash of the cheese sauce (about 1/2 cup). Blend until smooth and creamy. Stir this cauliflower mixture back into the cheese sauce.

              Combine Pasta and Sauce: Add the drained pasta to the cheese sauce, and stir until the pasta is fully coated in the creamy sauce.

                Optional Topping: Preheat your oven to 350°F (175°C). If you like a crunchy topping, pour the mac and cheese into a greased baking dish. Mix breadcrumbs with a tablespoon of melted butter, sprinkle over the top, and bake for 15-20 minutes until golden and bubbly.
