1 lb (450g) carrots, peeled and chopped

1 medium onion, diced

2 cloves garlic, minced

1-inch piece fresh ginger, peeled and grated

4 cups vegetable broth

1 cup coconut milk

2 tablespoons olive oil

1 teaspoon ground cumin

1/2 teaspoon ground turmeric

Salt and pepper to taste

Fresh cilantro for garnish (optional)

Sauté Aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until it becomes translucent. Add the minced garlic and grated ginger, cooking for an additional 2 minutes until fragrant.

    Add Carrots and Spices: Stir in the chopped carrots, ground cumin, and ground turmeric. Cook for 5 more minutes, allowing the spices to coat the vegetables.

      Pour in Broth: Add the vegetable broth, bring the mixture to a boil, then reduce heat and let it simmer for about 20 minutes, or until the carrots are tender.

        Blend the Soup: Carefully transfer the soup to a blender in batches, or use an immersion blender, and blend until smooth and creamy. You can also add a splash of water if it’s too thick for your desired consistency.

          Stir in Coconut Milk: Return the soup to the pot and stir in the coconut milk. Heat gently until warmed through. Taste and season with salt and pepper as needed.
