1 lb large shrimp, peeled and deveined

4 oz Andouille sausage, diced

1 medium onion, finely chopped

2 cloves garlic, minced

2 medium potatoes, diced (about 2 cups)

1 cup corn kernels (fresh or frozen)

1 red bell pepper, chopped

4 cups chicken broth

1 cup heavy cream

2 tablespoons Cajun seasoning

1 tablespoon olive oil

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Optional: 1 tablespoon lemon juice

Sauté the Andouille: In a large pot, heat the olive oil over medium heat. Add the diced Andouille sausage and cook until it starts to brown, about 4-5 minutes.

    Add Aromatics: Stir in the chopped onion, bell pepper, and minced garlic. Sauté until the vegetables are softened, about 3-4 minutes.

      Cook the Potatoes: Add the diced potatoes and Cajun seasoning to the pot. Stir well to combine, allowing the spices to coat the potatoes. Cook for another 2-3 minutes.

        Pour in Broth: Add the chicken broth to the pot. Bring the mixture to a gentle simmer, then reduce the heat to low. Cover and let it cook for about 15-20 minutes, or until the potatoes are tender.
