12 ounces pasta (fettuccine or penne works well)

1 pound smoked sausage, sliced (Andouille or kielbasa)

1 medium onion, diced

1 bell pepper (red or green), diced

3 cloves garlic, minced

1 can (14.5 ounces) diced tomatoes (fire-roasted preferred)

1 cup heavy cream

1 cup chicken broth

1 tablespoon Cajun seasoning (adjust to taste)

½ teaspoon smoked paprika

¼ teaspoon cayenne pepper (optional for extra heat)

2 tablespoons olive oil

Salt and pepper to taste

¼ cup chopped fresh parsley (for garnish)

Grated Parmesan cheese (for serving)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Drain and set aside, reserving a little pasta water for later if needed.

    Sauté Sausage: In a large skillet or pan, heat the olive oil over medium heat. Add the sliced sausage and cook until browned, about 5-7 minutes. Remove the sausage from the pan and set aside.

      Sauté Vegetables: In the same skillet, add the diced onion and bell pepper. Sauté for about 3-4 minutes until the vegetables are softened. Add the minced garlic and cook for another minute until fragrant.

        Make the Sauce: Add the diced tomatoes (with juices), chicken broth, heavy cream, Cajun seasoning, smoked paprika, cayenne pepper, salt, and pepper to the skillet. Stir to combine and bring to a simmer. Cook for about 5-7 minutes until the sauce has thickened slightly.

          Combine Everything: Return the cooked sausage to the skillet and add the drained pasta. Toss everything together until the pasta is well coated with the creamy sauce. If the sauce is too thick, add a splash of reserved pasta water to reach your desired consistency.
