Ingredients

8 oz fettuccine pasta

2 boneless, skinless chicken breasts (about 1 lb)

2 tablespoons Cajun seasoning

2 tablespoons olive oil

1 small onion, diced

3 cloves garlic, minced

1 bell pepper (red or green), sliced

1 cup heavy cream

1 cup chicken broth

1 cup grated Parmesan cheese

Salt and pepper, to taste

2 tablespoons fresh parsley, chopped (for garnish)

Instructions

Cook the Pasta: In a large pot of salted boiling water, cook the fettuccine according to package instructions until al dente. Drain and set aside.

Prepare the Chicken: While the pasta is cooking, season the chicken breasts with Cajun seasoning on both sides, ensuring they are evenly coated.

Sear the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the seasoned chicken breasts and cook for 6-7 minutes on each side, or until fully cooked (internal temperature should reach 165°F/75°C). Remove from the skillet and let rest for 5 minutes before slicing into strips.

Sauté the Vegetables: In the same skillet, add the diced onion and sliced bell pepper. Sauté for about 3-4 minutes until they begin to soften. Add the minced garlic and cook for an additional minute until fragrant.

Make the Sauce: Pour in the chicken broth and bring to a simmer, scraping the bottom of the pan to deglaze and pick up any brown bits. Slowly stir in the heavy cream, bringing it to a gentle simmer.

Add Cheese and Pasta: Reduce the heat to low, and stir in the grated Parmesan cheese until melted and the sauce is creamy. Season with salt and pepper to taste. Add the cooked fettuccine to the skillet, tossing to coat the pasta in the sauce.

Combine Chicken with Pasta: Slice the rested chicken and place it on top of the creamy pasta. Gently toss again to combine everything evenly.

Garnish and Serve: Remove from heat, sprinkle with freshly chopped parsley, and serve hot.
