Ingredients

2 boneless, skinless chicken breasts

2 tablespoons Cajun seasoning (adjust to taste)

2 tablespoons olive oil

8 ounces fettuccine pasta

3 tablespoons unsalted butter

4 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

1/2 teaspoon salt (to taste)

1/4 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional for extra heat)

Fresh parsley, chopped (for garnish)

Instructions

Prepare the Chicken: Start by seasoning the chicken breasts evenly with the Cajun seasoning. Make sure to coat both sides well to infuse the flavors.

Cook the Pasta: In a large pot, bring salted water to a boil. Add the fettuccine pasta and cook according to package instructions until al dente. Drain and set aside, reserving 1 cup of pasta water.

Sear the Chicken: In a large skillet over medium-high heat, heat the olive oil. Once hot, add the chicken breasts and sear for about 6-7 minutes on each side or until fully cooked and golden brown. Remove the chicken from the skillet and let it rest for a few minutes before slicing it into strips.

Make the Alfredo Sauce: In the same skillet (reduce heat to medium), add the butter and melt it. Then, add the minced garlic and sauté for about 30 seconds until fragrant. Next, pour in the heavy cream, stirring constantly. Bring the cream to a gentle simmer.

Incorporate Cheese: Gradually whisk in the Parmesan cheese, stirring until melted and smooth. If the sauce appears too thick, add a little of the reserved pasta water until desired consistency is reached.

Season & Combine: Add the salt, black pepper, and red pepper flakes (if using) to the sauce. Stir well. Toss the cooked fettuccine in the sauce until well-coated.

Combine Chicken: Add the sliced chicken on top of the pasta and gently toss everything together to combine.

Serve: Plate the creamy Cajun chicken Alfredo, garnishing with freshly chopped parsley for a pop of color.
