1 cup orzo pasta

2 cups vegetable broth

1 cup fresh broccoli florets

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 cup sharp cheddar cheese, grated

½ cup cream cheese, softened

1 teaspoon Dijon mustard

¼ teaspoon black pepper

½ teaspoon salt (to taste)

1 tablespoon lemon juice

¼ cup grated Parmesan cheese for topping

Fresh parsley, chopped for garnish

Cook the Orzo: In a medium pot, bring the vegetable broth to a boil. Add the orzo pasta and cook according to package instructions, usually about 8-10 minutes. In the last 2-3 minutes of cooking, add the fresh broccoli florets. Once done, drain and set aside.

    Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Then, add the minced garlic and cook for an additional 1 minute until fragrant.

      Combine Cheeses: Lower the heat to medium-low and stir in the softened cream cheese until melted and combined with the onion and garlic. Add the grated sharp cheddar cheese and Dijon mustard, stirring until the cheeses are fully melted and creamy.
