Ingredients

4 bone-in pork chops (about 1 inch thick)

6 slices of bacon, chopped

1 medium onion, finely chopped

3 cloves garlic, minced

1 cup heavy cream

1 cup chicken broth

1 teaspoon dried thyme

Salt and pepper, to taste

2 tablespoons olive oil

1 tablespoon Worcestershire sauce

1 cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Instructions

Prepare the Pork Chops: Season the pork chops generously with salt and pepper on both sides.

Cook the Bacon: In a large skillet over medium heat, add the chopped bacon. Cook until crispy, about 5-7 minutes. Remove the bacon with a slotted spoon and set aside, leaving the rendered fat in the pan.

Sear the Pork Chops: In the same skillet, add the olive oil to the bacon grease. Increase the heat to medium-high. Sear the pork chops for about 4-5 minutes on each side until they are golden brown and cooked through. Remove from the skillet and keep warm.

Sauté Onions and Garlic: In the same skillet, reduce the heat to medium and add the chopped onion. Sauté until translucent, about 3-4 minutes. Add the minced garlic and cook for another minute until fragrant.

Make the Cream Sauce: Pour in the chicken broth and Worcestershire sauce, scraping the bottom of the skillet to deglaze. Let it simmer for about 2 minutes. Then, add the heavy cream, dried thyme, and Parmesan cheese. Stir until the cheese melts and the sauce thickens, about 3-4 minutes. Season with salt and pepper to taste.

Combine Everything: Return the pork chops and crispy bacon to the skillet, coating them with the creamy sauce. Let them simmer for an additional 2-3 minutes to warm through, allowing the flavors to meld.

Serve: Plate the pork chops and drizzle the creamy bacon sauce over the top. Garnish with chopped fresh parsley.
