12 oz (340g) linguine or spaghetti

2 ripe avocados, pitted and peeled

2 cloves garlic, minced

1 medium lime, juiced (about 2 tablespoons)

Zest of 1 lime

1/4 cup fresh basil leaves, packed

1/4 cup grated Parmesan cheese (or nutritional yeast for a vegan option)

1/4 cup extra virgin olive oil

Salt and black pepper, to taste

Cherry tomatoes, halved (for garnish)

Extra basil leaves (for garnish)

Crushed red pepper flakes (optional, for a kick)

Instructions
 

Cook the Pasta:

    In a large pot of boiling salted water, cook the linguine or spaghetti according to package instructions until al dente. Reserve 1 cup of pasta cooking water, then drain the pasta and return it to the pot.

      Prepare the Avocado Sauce:

        In a food processor, combine the avocados, minced garlic, lime juice, lime zest, basil leaves, Parmesan cheese, extra virgin olive oil, salt, and black pepper. Blend until smooth and creamy. If the sauce is too thick, add a bit of the reserved pasta water to reach your desired consistency.

          Combine Pasta and Sauce:

            Pour the creamy avocado sauce over the drained pasta in the pot. Use tongs to combine thoroughly, ensuring the pasta is well-coated with the sauce.

              Adjust Consistency:

                If needed, gradually add more of the reserved pasta cooking water until you achieve a rich, creamy texture.
