2 ripe avocados, pitted and peeled

2 tablespoons freshly squeezed lime juice (about 1 lime)

1 clove garlic, minced

1/4 cup fresh basil leaves, plus extra for garnish

1/4 cup grated Parmesan cheese (or nutritional yeast for a vegan option)

2-3 tablespoons olive oil

Salt and black pepper, to taste

Zest of 1 lime

Optional: Cherry tomatoes, halved (for garnish)

Optional: Crushed red pepper flakes (for a kick)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta water and then drain the pasta.
