Ingredients

4 medium zucchinis, spiralized into zoodles

1 cup heavy cream

1 cup grated Parmesan cheese

2 tablespoons unsalted butter

3 cloves garlic, minced

1/2 teaspoon salt (or to taste)

1/4 teaspoon black pepper

1/4 teaspoon nutmeg

1/2 cup cooked chicken, diced (optional)

Fresh parsley, chopped (for garnish)

Extra grated Parmesan (for serving)

Instructions

Prepare the Zoodles: Start by spiralizing the zucchinis into zoodles. If you do not have a spiralizer, you can also use a vegetable peeler to create long, thin strips. Set aside.

Make the Alfredo Sauce: In a large skillet over medium heat, melt the butter. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.

Add the Cream: Pour in the heavy cream and bring it to a simmer. Reduce the heat to low, allowing the cream to thicken slightly for about 3-4 minutes.

Incorporate Cheese and Seasonings: Gradually whisk in the grated Parmesan cheese until smooth and creamy. Stir in salt, black pepper, and nutmeg. If you are using chicken, add it in at this point to warm through.

Cook the Zoodles: Add the zoodles to the skillet, tossing gently to coat them in the creamy Alfredo sauce. Cook for about 2-3 minutes, just until the zoodles are tender but still slightly crisp.

Serve: Remove from heat and transfer to serving plates. Garnish with fresh parsley and extra Parmesan cheese, if desired.

Enjoy: Serve immediately for the best texture and flavor!
