Cranberry Maple Glazed Meatloaf

1 pound ground beef

1 pound ground pork

1 cup breadcrumbs (preferably whole wheat)

1/2 cup finely chopped onion

1/2 cup finely chopped celery

1/2 cup finely chopped bell pepper (red or green)

2 cloves garlic, minced

1/2 cup fresh cranberries (or 1/3 cup dried cranberries)

2 large eggs

1 teaspoon Worcestershire sauce

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 teaspoon salt

1/2 teaspoon black pepper

1/2 cup maple syrup

1/2 cup cranberry sauce (homemade or store-bought)

Optional: Fresh parsley for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare Meat Mixture: In a large mixing bowl, combine the ground beef and ground pork. Add the breadcrumbs, chopped onion, celery, bell pepper, minced garlic, fresh cranberries, eggs, Worcestershire sauce, thyme, rosemary, salt, and pepper. Mix well until all ingredients are evenly incorporated.

      Shape the Meatloaf: Transfer the meat mixture to a parchment-lined loaf pan or shape it into a loaf on a baking sheet. Make sure to form a uniform shape to ensure even cooking.

        Make the Glaze: In a separate bowl, mix together the maple syrup and cranberry sauce until well blended. Reserve a small amount of this glaze for drizzling on top before serving.

          Glaze the Meatloaf: Brush about half of the cranberry maple glaze mixture over the top of the meatloaf, ensuring it's well coated.

            Bake the Meatloaf: Place the meatloaf in the preheated oven and bake for approximately 60-75 minutes, or until the internal temperature reaches 160°F (71°C). Baste with the glaze halfway through baking for extra flavor.

              Rest and Serve: Once cooked, remove the meatloaf from the oven and let it rest for about 10 minutes. Drizzle the reserved glaze on top before slicing. Optionally, garnish with fresh parsley for a pop of color.
