Cranberry Apple Crumble Pie

For the Pie Filling:

3 medium apples (Granny Smith or Honeycrisp), peeled, cored, and sliced

1 cup fresh cranberries (or frozen, thawed)

1/2 cup granulated sugar

1 tablespoon lemon juice

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1 tablespoon cornstarch

For the Crust:

1 1/4 cups all-purpose flour

1/2 teaspoon salt

1/2 cup unsalted butter, cold and cubed

1/4 cup granulated sugar

1 to 2 tablespoons ice water

For the Crumble Topping:

1 cup old-fashioned oats

1/2 cup all-purpose flour

1/2 cup brown sugar, packed

1/2 cup unsalted butter, melted

1/2 teaspoon ground cinnamon

1/4 teaspoon salt

Instructions
 

Prepare the Pie Crust:

    - In a mixing bowl, combine 1 1/4 cups of flour and 1/2 teaspoon of salt.

      - Add the cold cubed butter and use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs.

        - Stir in 1/4 cup sugar and then add ice water, one tablespoon at a time, just until the dough comes together.

          - Shape the dough into a disk, wrap it in plastic, and refrigerate for at least 30 minutes.

            Make the Filling:

              - In a large bowl, combine the sliced apples and fresh cranberries.

                - Add 1/2 cup sugar, lemon juice, cinnamon, nutmeg, and cornstarch. Toss until the fruit is evenly coated. Set aside.

                  Preheat the Oven:

                    - Preheat your oven to 375°F (190°C).

                      Roll Out the Crust:

                        - On a lightly floured surface, roll out the chilled dough into a 12-inch circle.

                          - Transfer it to a 9-inch pie pan, trimming the excess around the edges.

                            Add the Filling:

                              - Pour the apple-cranberry filling into the prepared pie crust, spreading it evenly.

                                Prepare the Crumble Topping:

                                  - In a medium bowl, mix together oats, 1/2 cup flour, brown sugar, melted butter, cinnamon, and salt until crumbly.

                                    - Sprinkle the crumble mixture generously over the pie filling.

                                      Bake:

                                        - Bake in the preheated oven for about 45-50 minutes, or until the filling is bubbly and the crumble is golden brown.

                                          Cool & Serve:

                                            - Allow the pie to cool for at least 15-20 minutes before slicing. Serve warm or at room temperature, optionally with a scoop of vanilla ice cream or whipped cream.
