1 cup green or brown lentils, rinsed and drained

2 tablespoons olive oil

1 medium onion, chopped

3 cloves garlic, minced

2 medium carrots, diced

2 celery stalks, diced

1 medium zucchini, diced

1 bell pepper (red or yellow), diced

1 can (14 oz) diced tomatoes, with juices

6 cups vegetable broth (or more, if desired)

1 teaspoon dried thyme

1 teaspoon ground cumin

1 teaspoon smoked paprika

Salt and pepper to taste

2 cups kale or spinach, chopped

Fresh parsley for garnish (optional)

Juice of 1 lemon (optional)

Instructions
 

Prepare the Lentils: Rinse and drain the lentils under cold water. Set aside.

    Sauté Vegetables: In a large pot, heat olive oil over medium heat. Add the chopped onion and garlic, sautéing until the onion becomes translucent and fragrant, about 3-4 minutes.

      Add Root Vegetables: Stir in the diced carrots and celery. Cook for another 4-5 minutes until the vegetables start to soften.

        Incorporate Remaining Vegetables: Add the zucchini and bell pepper to the pot. Stir well and allow to cook for an additional 3-4 minutes.

          Add Lentils and Spices: Mix in the rinsed lentils, diced tomatoes with their juices, thyme, cumin, smoked paprika, salt, and pepper. Stir to combine all ingredients.

            Pour in Broth: Add the vegetable broth, bringing the mixture to a gentle boil. Once boiling, reduce heat to low and cover the pot. Let it simmer for about 25-30 minutes, or until the lentils are tender.

              Add Greens: Stir in the chopped kale (or spinach) during the last 5 minutes of cooking, allowing the greens to wilt and just soften. Adjust seasoning with more salt and pepper if needed.

                Finishing Touches: For a zesty flavor, squeeze in the juice of 1 lemon, if desired. Serve hot, garnished with fresh parsley for an extra touch.
