Ingredients

1 cup cottage cheese (preferably low-fat)

1 cup all-purpose flour (plus extra for dusting)

1 teaspoon baking powder

1/2 teaspoon salt

1 tablespoon olive oil (plus extra for cooking)

1 tablespoon fresh herbs (like dill, chives, or parsley), finely chopped (optional)

1 egg (optional, for richer flavor)

Water (as needed for dough consistency)

Instructions

Prepare the dough: In a mixing bowl, combine the cottage cheese, all-purpose flour, baking powder, salt, and olive oil. If using, add the egg to enrich the dough. Mix gently until a sticky dough forms. If the dough feels too dry, add a little water, one tablespoon at a time, until the desired consistency is achieved.

Incorporate herbs (optional): If you’re using fresh herbs, fold them into the dough at this stage for added flavor.

Knead the dough: Lightly flour your work surface and transfer the dough onto it. Knead the dough for about 2-3 minutes until smooth and elastic. If it’s too sticky, sprinkle a bit more flour as needed.

Rest the dough: Cover the dough with a damp cloth or plastic wrap and let it rest for at least 20-30 minutes. This step is essential for gluten development.

Divide and shape: After resting, divide the dough into 6 equal portions. Roll each portion into a ball, then use a rolling pin to flatten them into circles about 1/4 inch thick.

Cook the flatbreads: Heat a non-stick skillet or griddle over medium heat and add a little olive oil. Cook each round of flatbread for about 2-3 minutes on each side, or until golden brown and puffed up. Adjust the heat as necessary to avoid burning.

Serve warm: Transfer the cooked flatbreads to a platter and cover with a clean kitchen towel to keep them warm. Serve immediately with your favorite dips, spreads, or as wraps for a delicious meal!
