Corn & Avocado Salad with Honey Lime Dressing

2 cups fresh corn kernels (about 4 ears of corn)

2 ripe avocados, diced

1 red bell pepper, diced

1 small red onion, finely chopped

1 cup cherry tomatoes, halved

1/4 cup fresh cilantro, chopped

1 lime, juiced

2 tablespoons honey

1 tablespoon olive oil

Salt and pepper, to taste

Optional: 1/4 teaspoon chili powder for a kick

Prepare the Corn: If using fresh corn, bring a large pot of water to a boil. Add the corn and cook for 3-5 minutes until tender. Drain and let it cool. If using frozen corn, simply thaw and pat dry.

    Combine Vegetables: In a large bowl, combine the cooled corn, diced avocados, red bell pepper, chopped red onion, and halved cherry tomatoes. Gently toss to combine, being careful not to mash the avocados.

      Make the Dressing: In a small bowl, whisk together the lime juice, honey, olive oil, salt, pepper, and chili powder (if using) until well combined and smooth.

        Assemble the Salad: Drizzle the honey lime dressing over the corn and avocado mixture. Add the chopped cilantro and toss everything gently until all ingredients are evenly coated with the dressing.
