Cold Tuna Pasta Salad

8 oz (about 225g) of pasta (fusilli or penne work great)

1 can (5 oz or 150g) of tuna in olive oil, drained

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 cup red onion, finely chopped

1/2 cup Kalamata olives, pitted and sliced

1/4 cup fresh parsley, chopped

1/4 cup feta cheese, crumbled

1/4 cup extra virgin olive oil

2 tbsp red wine vinegar

1 tsp dried oregano

Salt and black pepper, to taste

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside to cool.

    Prepare the Vegetables: While the pasta cools, chop the cherry tomatoes, cucumber, and red onion. Halve the cherry tomatoes, dice the cucumber into small cubes, and finely chop the red onion.

      Mix the Ingredients: In a large mixing bowl, combine the cooled pasta, tuna, cherry tomatoes, cucumber, red onion, olives, parsley, and feta cheese.

        Make the Dressing: In a small bowl, whisk together the olive oil, red wine vinegar, oregano, salt, and black pepper until emulsified.

          Combine: Pour the dressing over the pasta salad and gently toss until everything is well coated.

            Chill and Serve: Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld. Serve cold and enjoy!
