8 oz (225 g) rice noodles

1/2 cup creamy peanut butter

3 tablespoons soy sauce

2 tablespoons rice vinegar

1 tablespoon honey or maple syrup

1 tablespoon sriracha (adjust to taste)

2 cloves garlic, minced

1 teaspoon grated ginger

1/4 cup warm water (adjust for desired sauce consistency)

1 red bell pepper, julienned

1 cup shredded carrots

1 cup thinly sliced cucumber

1/4 cup chopped green onions

1/4 cup chopped fresh cilantro

1/4 cup crushed peanuts (for garnish)

Lime wedges (for serving)

Instructions
 

Cook the Rice Noodles: Bring a large pot of water to a boil. Add the rice noodles and cook according to package instructions until al dente, typically about 4-6 minutes. Drain the noodles and rinse them under cold water to stop the cooking process. Set aside.

    Make the Peanut Sauce: In a mixing bowl, whisk together the peanut butter, soy sauce, rice vinegar, honey (or maple syrup), sriracha, minced garlic, grated ginger, and warm water. Stir until the mixture is smooth and evenly combined. If the sauce is too thick, add a little more warm water until you reach your desired consistency.
