8 oz rice noodles

1 red bell pepper, thinly sliced

1 cup shredded carrots

1 cucumber, julienned

1 cup fresh bean sprouts

1/4 cup fresh cilantro, chopped

1/4 cup green onions, chopped

1/4 cup crushed peanuts (optional, for garnish)

For the Dressing:

3 tbsp soy sauce

2 tbsp lime juice

1 tbsp fish sauce (or tamari for a vegetarian option)

1 tbsp honey or agave syrup

1 tsp sesame oil

1 tsp sriracha (adjust for spice preference)

1 garlic clove, minced

Instructions
 

Prepare the Noodles: Bring a large pot of water to a boil. Add the rice noodles and cook according to package instructions until al dente. Drain and rinse under cold water until chilled. Set aside.

    Make the Dressing: In a small bowl, whisk together the soy sauce, lime juice, fish sauce, honey, sesame oil, sriracha, and minced garlic until well combined. Adjust seasonings to taste, adding more lime or honey for balance.

      Combine Ingredients: In a large mixing bowl, add the cooled rice noodles, sliced red bell pepper, shredded carrots, julienned cucumber, bean sprouts, chopped cilantro, and green onions.

        Dress the Salad: Pour the dressing over the noodle mixture and toss gently until everything is evenly coated.

          Chill: Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.
