8 oz rotini pasta

1 cup fresh baby spinach, chopped

1 cup canned artichoke hearts, drained and chopped

1/2 cup cherry tomatoes, halved

1/3 cup red onion, finely diced

1/2 cup grated Parmesan cheese

1/2 cup mayonnaise

1/4 cup plain Greek yogurt

2 tbsp olive oil

2 tbsp lemon juice

1 tsp garlic powder

Salt and pepper to taste

Optional: 1/4 cup sliced black olives and fresh parsley for garnish

Instructions
 

Cook the Pasta: In a large pot of salted water, cook the rotini pasta according to package instructions until al dente. Drain and rinse under cold water to stop cooking. Set aside.

    Prepare the Dressing: In a medium bowl, whisk together mayonnaise, Greek yogurt, olive oil, lemon juice, garlic powder, salt, and pepper until smooth.

      Combine Ingredients: In a large mixing bowl, combine the cooked and cooled pasta, chopped spinach, artichoke hearts, cherry tomatoes, red onion, and grated Parmesan cheese.

        Add the Dressing: Pour the dressing over the pasta mixture and toss until everything is evenly coated. Adjust seasoning with additional salt and pepper if desired.

          Chill the Salad: Cover the bowl with plastic wrap or a lid and refrigerate for at least 1 hour (or up to overnight) to allow flavors to meld.
