8 oz spaghetti

1 cup cherry tomatoes, halved

1 medium cucumber, diced

1 bell pepper (any color), diced

1 cup corn (fresh or canned, drained)

1 cup cooked chickpeas (or canned, rinsed and drained)

1/2 red onion, thinly sliced

1/4 cup black olives, sliced

1/4 cup feta cheese, crumbled (optional)

1/4 cup fresh basil leaves, chopped

1/4 cup olive oil

2 tbsp balsamic vinegar

1 clove garlic, minced

Salt and pepper, to taste

Cook the Spaghetti: In a large pot of salted boiling water, cook the spaghetti according to the package instructions until al dente. Drain, rinse under cold water to stop the cooking process, and set aside to cool completely.

    Prepare the Veggies: While the spaghetti is cooling, prepare the vegetables. In a large mixing bowl, combine cherry tomatoes, cucumber, bell pepper, corn, chickpeas, red onion, and olives.

      Make the Dressing: In a separate small bowl, whisk together olive oil, balsamic vinegar, minced garlic, salt, and pepper. Adjust seasoning to taste.
