Cold Peanut Sesame Noodles

8 oz (225 g) dried noodles (preferably rice or soba noodles)

1/3 cup creamy peanut butter

2 tbsp sesame oil

2 tbsp soy sauce (or tamari for gluten-free)

1 tbsp rice vinegar

1 tbsp honey or maple syrup

1 tsp sriracha (or more to taste)

1 clove garlic, minced

1-inch piece of fresh ginger, grated

1/4 cup water (or more for desired consistency)

1 cup shredded carrots

1 cup cucumber, julienned

1 red bell pepper, thinly sliced

4 green onions, chopped

1/4 cup chopped cilantro (fresh, for garnish)

Sesame seeds (for garnish)

Instructions
 

Cook the Noodles: Bring a large pot of salted water to a boil. Cook the noodles according to package instructions until al dente. Drain and rinse under cold water to stop cooking. Drain again and set aside.

    Make the Sauce: In a mixing bowl, combine the peanut butter, sesame oil, soy sauce, rice vinegar, honey (or maple syrup), sriracha, minced garlic, grated ginger, and water. Whisk until smooth and well combined. Adjust the amount of water to reach your desired sauce consistency.

      Toss the Noodles: In a large mixing bowl, add the cooked and cooled noodles. Pour the peanut-sesame sauce over the noodles and toss gently to ensure that the noodles are evenly coated.

        Add Vegetables: Toss in the shredded carrots, julienned cucumber, red bell pepper, and chopped green onions. Mix thoroughly to incorporate all the vegetables.
