1 cup couscous

1 can (15 oz) chickpeas, drained and rinsed

1 cup cherry tomatoes, halved

1 medium cucumber, diced

1 bell pepper (any color), diced

1/4 red onion, finely chopped

1/2 cup fresh parsley, chopped

1/4 cup feta cheese, crumbled (optional)

1/4 cup olive oil

2 tablespoons lemon juice

1 teaspoon ground cumin

Salt and pepper to taste

4 large lettuce leaves (such as iceberg or romaine)

Whole wheat wraps or tortillas

Instructions
 

Prepare the Couscous: In a medium saucepan, bring 1 1/4 cups of water to a boil. Remove from heat and stir in the couscous. Cover and let it sit for about 5 minutes, then fluff with a fork.

    Mix the Dressing: In a small bowl, whisk together olive oil, lemon juice, cumin, salt, and pepper. Set aside.

      Combine the Ingredients: In a large mixing bowl, add the cooked couscous, chickpeas, cherry tomatoes, cucumber, bell pepper, red onion, parsley, and feta cheese (if using). Pour the dressing over the salad and toss everything together until well combined.

        Prepare the Wraps: Lay the large lettuce leaves flat on a clean surface. Place a generous amount of the couscous mixture in the center of each leaf.
