8 oz (about 225g) fusilli or rotini pasta

1 cup cherry tomatoes, halved

8 oz (about 225g) fresh mozzarella balls (bocconcini), halved

1 cup fresh basil leaves, packed

1/2 cup pine nuts (or walnuts)

1/2 cup grated Parmesan cheese

1/2 cup extra virgin olive oil

1 clove garlic, minced

Salt and pepper to taste

1 tablespoon fresh lemon juice

Optional: balsamic glaze for drizzling

Cook the Pasta: In a large pot, bring salted water to a boil. Add the fusilli pasta and cook according to package instructions until al dente. Drain and rinse under cold water to cool completely. Set aside.

    Make the Pesto: In a food processor, combine basil leaves, pine nuts, Parmesan cheese, garlic, and a pinch of salt. While pulsing, drizzle in the olive oil until the mixture is smooth and creamy. Adjust seasoning with salt, pepper, and lemon juice. If needed, add a bit more olive oil to reach desired consistency.
