8 oz rice noodles

1 cup shredded carrots

1 cup red bell pepper, julienned

1 cup cucumber, thinly sliced

½ cup red cabbage, shredded

¼ cup green onions, chopped

¼ cup fresh cilantro, chopped

1 cup cooked chicken (optional, shredded)

1 tbsp sesame seeds (for garnish)

Peanut Sauce:

¼ cup creamy peanut butter

3 tbsp soy sauce

2 tbsp rice vinegar

1 tbsp honey or maple syrup

1 tbsp sesame oil

1-2 tsp sriracha (optional for heat)

2-3 tbsp warm water (to thin sauce)

Instructions
 

Cook the Noodles: In a large pot, bring water to a boil. Add the rice noodles and cook according to package instructions until just tender. Drain and rinse under cold water to stop the cooking process. Set aside in a bowl.

    Prepare the Peanut Sauce: In a medium bowl, combine the creamy peanut butter, soy sauce, rice vinegar, honey (or maple syrup), sesame oil, and sriracha (if using). Whisk until smooth. If the sauce is too thick, add 2-3 tablespoons of warm water, one tablespoon at a time, until desired consistency is achieved.

      Toss the Noodles: Pour about half of the peanut sauce over the cooled noodles, tossing gently to coat. Reserve the remaining sauce for serving.

        Add the Veggies: In the bowl with the noodles, add shredded carrots, red bell pepper, cucumber, red cabbage, green onions, and cooked chicken (if using). Gently mix everything together until evenly combined.
