Ingredients
  

1 cup rolled oats

1 cup coconut milk (canned or carton)

½ cup diced fresh mango (plus extra for topping)

2 tablespoons chia seeds

2 tablespoons honey or maple syrup (adjust for sweetness)

½ teaspoon vanilla extract

¼ teaspoon salt

¼ cup shredded coconut (unsweetened, for topping)

Fresh mint leaves (for garnish, optional)

Instructions
 

In a medium mixing bowl, combine rolled oats, coconut milk, diced mango, chia seeds, honey (or maple syrup), vanilla extract, and salt. Stir well until all ingredients are evenly mixed.

    Divide the mixture into two jars or airtight containers, sealing them tightly.

      Refrigerate overnight (or at least 4-6 hours) to allow the oats and chia seeds to absorb the liquid and soften.

        In the morning, give the oats a good stir. If the mixture is too thick, you can add a splash of coconut milk to reach your desired consistency.

          Top each jar with additional diced mango, a sprinkle of shredded coconut, and fresh mint leaves if using.
