Classic Meatloaf with Tangy Glaze

For the Meatloaf:

1 lb ground beef (preferably 80/20 blend for flavor and moisture)

1 lb ground pork

1 cup breadcrumbs

1/2 cup milk

1/2 cup finely chopped onion

1/4 cup finely chopped bell pepper (red or green for sweetness)

2 large eggs

2 cloves garlic, minced

2 tablespoons Worcestershire sauce

1 tablespoon Dijon mustard

1 teaspoon dried thyme

1 teaspoon salt

1/2 teaspoon black pepper

For the Tangy Glaze:

1/2 cup ketchup

2 tablespoons brown sugar

1 tablespoon apple cider vinegar

1 teaspoon Worcestershire sauce

1 teaspoon mustard powder

Preheat Oven: Preheat your oven to 350°F (175°C).

    Prepare Meat Mixture: In a large mixing bowl, combine the ground beef and ground pork. Add the breadcrumbs, milk, chopped onion, bell pepper, eggs, minced garlic, Worcestershire sauce, Dijon mustard, thyme, salt, and black pepper. Using your hands or a spatula, mix until just combined. Avoid overmixing, as this can lead to a dense meatloaf.

      Shape the Loaf: Transfer the meat mixture to a baking dish or a lined loaf pan, shaping it into a loaf form that is about 2 inches high.

        Make the Glaze: In a separate small bowl, whisk together ketchup, brown sugar, apple cider vinegar, Worcestershire sauce, and mustard powder until smooth.

          Glaze the Meatloaf: Spread half of the tangy glaze over the top of the meatloaf.

            Bake: Place the meatloaf in the preheated oven and bake for about 1 hour or until the internal temperature reaches 160°F (70°C). About 15 minutes before it’s done, brush on the remaining glaze for an extra layer of flavor.

              Rest and Serve: Once cooked, remove the meatloaf from the oven and let it rest for about 10 minutes before slicing. This helps maintain moisture within the meatloaf. Slice and serve warm, ideally with mashed potatoes and a side of green beans or your favorite vegetables.
