Cinnamon Cream Cheese Muffins

For the Muffins:

2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon ground cinnamon

1/2 cup granulated sugar

1/2 cup brown sugar, packed

1/2 cup unsalted butter, melted and slightly cooled

2 large eggs

1 teaspoon vanilla extract

1 cup buttermilk

For the Cream Cheese Filling:

8 oz cream cheese, softened

1/4 cup granulated sugar

1/2 teaspoon vanilla extract

1 tablespoon all-purpose flour

For the Cinnamon Sugar Topping:

1/4 cup granulated sugar

1 teaspoon ground cinnamon

2 tablespoons unsalted butter, melted (for brushing)

Instructions
 

Preheat the oven to 375°F (190°C). Line a muffin tin with paper liners or grease the cups.

    Prepare the Cream Cheese Filling: In a medium bowl, beat together the softened cream cheese, 1/4 cup sugar, 1/2 teaspoon vanilla, and 1 tablespoon flour until smooth. Set aside.

      Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, granulated sugar, and brown sugar until well combined.

        Combine Wet Ingredients: In a separate bowl, mix together the melted butter, eggs, vanilla, and buttermilk until well combined.

          Combine the Mixtures: Pour the wet mixture into the dry ingredients and gently mix until just combined. Do not overmix; a few lumps are okay.

            Fill Muffin Cups: Using an ice cream scoop or spoon, fill each muffin cup about halfway with the batter. Add approximately 1 tablespoon of the cream cheese filling to the center of each muffin, then cover with an additional scoop of muffin batter until the cups are about ¾ full.

              Prepare Cinnamon Sugar Topping: In a small bowl, mix together the 1/4 cup sugar and 1 teaspoon cinnamon. After the muffins are baked, brush the tops with melted butter and sprinkle the cinnamon sugar mixture over the muffins.

                Bake: Place the muffin tin in the preheated oven and bake for 18-22 minutes, or until a toothpick inserted into the muffin (not the cream cheese filling) comes out clean.

                  Cool: Let the muffins cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
