Ingredients
  

1 cup rolled oats

1/2 cup almond butter (or peanut butter)

1/3 cup honey or maple syrup

1 cup dried apples, finely chopped

1/2 teaspoon ground cinnamon

1/4 teaspoon nutmeg

1/4 teaspoon salt

1/4 cup chopped walnuts (optional)

1/4 cup flaxseeds or chia seeds (optional)

1/3 cup unsweetened shredded coconut (optional)

Instructions
 

In a large mixing bowl, combine the rolled oats, ground cinnamon, nutmeg, and salt. Mix to evenly distribute the spices.

    Add the almond butter and honey (or maple syrup) to the dry ingredients. Stir well until everything is thoroughly combined and sticky.

      Fold in the chopped dried apples, walnuts (if using), flaxseeds or chia seeds (if using), and shredded coconut (if using). Make sure all the ingredients are evenly mixed.

        Using your hands, roll the mixture into small balls, about 1 inch in diameter. You should get about 15-20 energy bites depending on the size.

          Place the rolled energy bites on a parchment-lined baking sheet or plate. Once all are formed, refrigerate for at least 30 minutes to help them firm up.

            Store the energy bites in an airtight container in the refrigerator for up to one week or freeze for longer storage.
