Ingredients

4 boneless, skinless chicken breasts

1/4 cup olive oil

Juice of 2 limes

Zest of 1 lime

1/4 cup fresh cilantro, finely chopped

4 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon paprika

1 teaspoon salt

1/2 teaspoon black pepper

Lime wedges and extra cilantro for garnish

Instructions

Prepare the Marinade: In a mixing bowl, whisk together the olive oil, lime juice, lime zest, chopped cilantro, minced garlic, ground cumin, paprika, salt, and black pepper until well combined.

Marinate the Chicken: Place the chicken breasts in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring all pieces are well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, preferably 2-4 hours for maximum flavor.

Preheat the Grill: Preheat your grill to medium-high heat (about 400°F/200°C). If using a grill pan, preheat it on medium heat; lightly oil the pan to prevent sticking.

Grill the Chicken: Remove the chicken breasts from the marinade, allowing any excess to drip off. Place them on the grill and cook for about 6-7 minutes on one side until grill marks appear.

Flip and Finish Cooking: Turn the chicken breasts over and grill for an additional 6-7 minutes, or until the internal temperature reaches 165°F (75°C) and the chicken is cooked through.

Rest the Chicken: Once grilled, transfer the chicken breasts to a plate and let them rest for 5 minutes. This allows the juices to redistribute for a juicier bite.

Serve: Slice the chicken, if desired, and serve garnished with lime wedges and additional cilantro. Pair this dish with rice, quinoa, or a fresh salad for a complete meal.
