Cilantro Lime Chicken Tacos

1 lb boneless, skinless chicken thighs

1/4 cup fresh lime juice (about 2 limes)

2 tablespoons olive oil

3 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon chili powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 cup fresh cilantro, chopped (plus more for garnish)

8 small corn or flour tortillas

1 cup red cabbage, shredded

1 avocado, sliced

1/2 cup crumbled feta cheese (optional)

Lime wedges, for serving

Instructions
 

Marinate the Chicken: In a large bowl, combine lime juice, olive oil, minced garlic, cumin, chili powder, salt, black pepper, and chopped cilantro. Add chicken thighs to the marinade and toss to coat. Cover and refrigerate for at least 30 minutes, preferably 1-2 hours for maximum flavor.

    Cook the Chicken: Heat a grill or grill pan over medium-high heat. Remove the chicken from the marinade and discard the marinade. Grill the chicken for 5-7 minutes per side, or until fully cooked and internal temperature reaches 165°F (75°C). Allow the chicken to rest for 5 minutes.

      Slice the Chicken: Once rested, slice the grilled chicken into thin strips.

        Warm the Tortillas: While the chicken is resting, warm the tortillas. You can do this in a dry skillet over medium heat for about 30 seconds on each side or wrap them in foil and place them in a warm oven.

          Assemble the Tacos: Place a generous amount of sliced chicken on each tortilla. Top with shredded red cabbage, avocado slices, and crumbled feta cheese if using. Garnish with extra chopped cilantro.

            Serve: Serve the tacos with lime wedges on the side for extra zing!
