2 limes (juiced and zested)

3 cloves garlic, minced

1 tsp ground cumin

1 tsp chili powder

1/2 tsp salt

1/4 tsp black pepper

1 cup long-grain brown rice

2 cups chicken broth (or water)

1 can (15 oz) black beans, rinsed and drained

1 cup corn kernels (fresh, frozen, or canned)

1 cup cherry tomatoes, halved

1 avocado, diced

1/2 cup red onion, finely chopped

1/2 cup shredded cheddar cheese (optional)

Sour cream and additional cilantro for garnish

Marinate the Chicken: In a bowl, combine chicken thighs, cilantro, lime juice, lime zest, minced garlic, cumin, chili powder, salt, and pepper. Mix thoroughly to coat the chicken and marinate for at least 30 minutes (or up to 2 hours in the refrigerator for more flavor).

    Cook the Rice: In a medium saucepan, combine the brown rice and chicken broth. Bring to a boil, then reduce to a low simmer, cover, and cook for 40-45 minutes, or until the rice is tender and liquid is absorbed. Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork.
