Chopped Thai Chicken Salad

2 cups cooked chicken breast, shredded

2 cups green cabbage, finely shredded

1 cup red cabbage, finely shredded

1 cup carrots, julienned or shredded

1 bell pepper (red or yellow), thinly sliced

1 cup fresh cilantro, chopped

1/4 cup green onions, chopped

1/2 cup peanuts, crushed (or cashews)

1/4 cup fresh mint, chopped

1/2 cup Thai-inspired dressing (see below)

For the Thai-Inspired Dressing:

1/4 cup peanut butter

3 tablespoons soy sauce (or tamari for gluten-free)

2 tablespoons rice vinegar

1 tablespoon honey or maple syrup

1 tablespoon lime juice (freshly squeezed)

1 clove garlic, minced

1 teaspoon fresh ginger, grated

1 tablespoon sesame oil

Red pepper flakes (to taste)

Instructions
 

Prepare the Thai Dressing: In a medium bowl, whisk together the peanut butter, soy sauce, rice vinegar, honey, lime juice, minced garlic, grated ginger, and sesame oil until smooth. If desired, adjust the heat with red pepper flakes to your liking. Set aside.

    Mix the Salad Base: In a large salad bowl, combine the shredded green cabbage, red cabbage, julienned carrots, sliced bell pepper, chopped cilantro, green onions, crushed peanuts, and chopped mint. Toss gently to combine all ingredients.

      Add Chicken: Add the shredded chicken to the salad mixture and give it another good toss to evenly distribute the chicken throughout the salad.
