2 cups shredded cooked chicken (preferably grilled or rotisserie)

1 cup shredded red cabbage

1 cup shredded carrots

1 cup snap peas, trimmed and halved

1 red bell pepper, thinly sliced

1/4 cup fresh cilantro leaves, chopped

1/4 cup green onions, sliced

1/3 cup unsalted roasted peanuts, roughly chopped

1 lime, juiced

2 tablespoons fish sauce

2 tablespoons soy sauce (low sodium)

1 tablespoon sesame oil

1 tablespoon pure maple syrup or honey

1 teaspoon chili garlic sauce (optional for heat)

Salt and pepper to taste

Instructions
 

Prepare the Vegetables: In a large bowl, combine the shredded red cabbage, shredded carrots, snap peas, and sliced red bell pepper. Toss gently to mix.

    Add the Chicken: Add the shredded chicken to the bowl of vegetables and toss to combine.
