Ingredients

1 cup unsalted butter, softened

1 cup brown sugar, packed

1/2 cup granulated sugar

2 teaspoons vanilla extract

2 cups all-purpose flour

1 cup mini chocolate chips

1/2 teaspoon salt

1 cup dark chocolate chips (for coating)

1 teaspoon coconut oil (optional, for smoother chocolate)

Instructions

Create the Base: In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar using an electric mixer on medium speed until the mixture is light and fluffy. This should take about 2-3 minutes.

Add Flavors: Mix in the vanilla extract until well combined.

Dry Ingredients: Gradually add the all-purpose flour and salt to the butter mixture. Use a spatula or wooden spoon to mix until just combined—be careful not to overmix.

Incorporate Chocolate: Fold in the mini chocolate chips until evenly distributed throughout the dough.

Chill the Dough: Cover the bowl with plastic wrap and refrigerate the cookie dough for at least 30 minutes. This will help it firm up for easier rolling.

Shape the Truffles: After chilling, scoop out about 1 tablespoon of dough and roll it between your palms to form a ball. Repeat this process with the remaining dough, placing the balls on a parchment-lined baking sheet.

Melt the Chocolate: In a microwave-safe bowl, combine the dark chocolate chips and coconut oil (if using). Heat in the microwave in 30-second intervals, stirring in between, until the chocolate is fully melted and smooth.

Coat the Truffles: Dip each cookie dough ball into the melted chocolate using a fork or a toothpick, allowing any excess chocolate to drip off. Place the coated truffles back onto the parchment-lined sheet.

Chill Again: Once all truffles are coated, refrigerate them for another 15-30 minutes to allow the chocolate to set.

Serve & Enjoy: Once the chocolate has hardened, serve your delicious Chocolate Chip Cookie Dough Truffles immediately or store them in an airtight container in the fridge for up to a week.
