1 lb (450g) chicken tenders

1 ripe mango, peeled and diced

1/4 cup chili sauce (adjust for spice preference)

2 tablespoons honey

2 tablespoons soy sauce

1 tablespoon lime juice

1 teaspoon garlic powder

1/2 teaspoon ground ginger

Salt and pepper to taste

1 cup panko breadcrumbs

1/2 cup all-purpose flour

2 large eggs, beaten

Fresh cilantro, for garnish (optional)

Lime wedges, for serving

Preparation of Marinade: In a bowl, combine the diced mango, chili sauce, honey, soy sauce, lime juice, garlic powder, ground ginger, salt, and pepper. Blend until smooth using a blender or food processor to create a marinade.

    Marinate the Chicken: Place the chicken tenders in a zip-top bag or shallow dish and pour the marinade over them. Make sure the chicken is well-coated. Seal the bag (or cover the dish) and refrigerate for at least 1 hour, preferably overnight for maximum flavor.
