Chili Mac Sliders with Cheddar Sauce

1 cup elbow macaroni

1 cup ground beef or turkey

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) diced tomatoes

1 cup beef or vegetable broth

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon garlic powder

Salt and pepper, to taste

1 tablespoon olive oil

½ cup chopped onion

½ cup chopped bell pepper

For the Cheddar Sauce

2 tablespoons butter

2 tablespoons all-purpose flour

1 cup whole milk

1½ cups shredded sharp cheddar cheese

½ teaspoon mustard powder

Salt, to taste

For the Sliders

12 slider buns

Fresh cilantro or green onions for garnish

Cook the Pasta: In a large pot, bring salted water to a boil. Cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

    Prepare the Chili Filling: In a large skillet over medium heat, heat olive oil. Add chopped onions and bell peppers, sautéing until softened, about 3-4 minutes. Add the ground beef or turkey and cook until browned. Drain excess fat if needed.

      Season the Meat: Stir in chili powder, cumin, garlic powder, salt, and pepper. Add diced tomatoes, kidney beans, and broth to the skillet. Bring to a simmer and cook for 10 minutes, stirring occasionally.

        Combine Pasta and Chili: Stir the cooked macaroni into the chili mixture until well combined. Remove from heat and set aside.

          Make the Cheddar Sauce: In a separate saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute. Gradually add milk, whisking continuously until the mixture thickens, about 3-5 minutes. Remove from heat and stir in shredded cheddar cheese and mustard powder until melted and smooth.
