1 lb ground beef or turkey

1 packet chili seasoning mix

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) diced tomatoes with green chilies

1 cup shredded cheddar cheese

12 slider-sized buns

1 small red onion, finely chopped

1 jalapeño, thinly sliced (optional for extra heat)

1 cup sour cream

Fresh cilantro, chopped (for garnish)

Olive oil, for cooking

Salt and pepper to taste

Prepare the Chili Mix: In a large skillet, heat a drizzle of olive oil over medium heat. Add the chopped red onion and sauté until translucent, about 3-4 minutes.

    Cook the Meat: Add the ground beef (or turkey) to the skillet. Season with salt and pepper. Cook until browned and no longer pink, breaking it up with a spatula, about 5-7 minutes.

      Add Beans & Tomato: Stir in the chili seasoning mix, kidney beans, and diced tomatoes with green chilies. Bring the mixture to a simmer and let it cook for about 10 minutes, allowing the flavors to meld. Stir occasionally.

        Cheese It Up: Preheat your oven to 350°F (175°C). Once the chili mixture is thickened, stir in half of the shredded cheddar cheese until melted.

          Assemble the Sliders: Slice the slider-sized buns in half to create top and bottom halves. On a baking sheet lined with parchment paper, place the bottom halves of the buns. Spoon a generous amount of the chili mixture onto each bun, then top with the remaining shredded cheddar cheese. Place the top halves of the buns over the cheese.

            Bake: Place the sliders in the preheated oven and bake for 10-12 minutes until the cheese is bubbly and the buns are slightly toasted.

              Add Finishing Touches: Remove from the oven. Top with sliced jalapeños (if using) and a dollop of sour cream on each slider. Sprinkle with fresh cilantro for garnish.
