1 pound grilled chicken breast, sliced

1 cup hummus (store-bought or homemade)

4 large whole wheat tortillas

1 cup spinach leaves

1 medium cucumber, thinly sliced

1 large carrot, grated

1 bell pepper (red or yellow), sliced thinly

1 avocado, sliced

1/2 red onion, thinly sliced

1 tablespoon olive oil

1 tablespoon lemon juice

Salt and pepper to taste

Fresh parsley or cilantro, for garnish (optional)

Prepare the Chicken: If you haven’t already, grill the chicken breasts until fully cooked (about 6-7 minutes per side) and then let them rest for a few minutes before slicing them into strips.

    Make Veggie Mix: In a mixing bowl, combine the sliced cucumbers, grated carrots, sliced bell pepper, and red onion. Drizzle with olive oil, lemon juice, and season with salt and pepper. Toss gently to combine.

      Spread the Hummus: Lay each tortilla on a flat surface and spread an even layer of hummus (about 1/4 cup) over each tortilla, leaving a bit of space around the edges for filling.
