Ingredients

For the Chicken:

1 lb boneless, skinless chicken thighs, diced

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

For the Base:

1 medium onion, diced

2 carrots, diced

2 celery stalks, diced

3 cloves garlic, minced

4 cups chicken broth

1 cup heavy cream

1 teaspoon dried thyme

1/2 teaspoon dried rosemary

1 cup frozen peas

For the Dumplings:

2 cups all-purpose flour

2 teaspoons baking powder

1/2 teaspoon baking soda

1 teaspoon salt

1/4 cup unsalted butter, cold and cubed

1 cup buttermilk

Fresh parsley, chopped (for garnish)

Instructions

Cook the Chicken:

    - In a large skillet, heat olive oil over medium-high heat. Add the diced chicken thighs, season with garlic powder, onion powder, salt, and pepper, and cook until golden brown, about 5-7 minutes. Remove the chicken from the skillet and set aside.

      Sauté the Vegetables:

        - In the same skillet, add the diced onion, carrots, and celery. Sauté for about 5 minutes until softened. Add the minced garlic and cook for an additional 1 minute until fragrant.

          Make the Sauce:

            - Pour in the chicken broth, heavy cream, dried thyme, and rosemary. Stir well, scraping up any browned bits from the bottom of the skillet. Return the cooked chicken to the skillet and bring the mixture to a gentle simmer.

              Prepare the Dumplings:

                - In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Add the cold cubed butter and use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs. Stir in the buttermilk until just combined.

                  Cook the Dumplings:

                    - Drop spoonfuls of the dumpling dough over the simmering chicken mixture in the skillet. Cover the skillet with a lid, reduce heat to low, and cook for 15-20 minutes without lifting the lid until the dumplings are cooked through and fluffy.

                      Finish and Serve:

                        - Once the dumplings are cooked, gently fold in the frozen peas. Cook for an additional 2-3 minutes until the peas are heated through. Garnish with freshly chopped parsley before serving.
