1/2 teaspoon baking soda

1/2 teaspoon ground cinnamon

1/2 cup unsalted butter, softened

1/2 cup packed brown sugar

1/4 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

3/4 cup raisins

1/2 cup chopped walnuts (optional)

Preheat the Oven: Preheat your oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper, leaving some overhang for easy removal later.

    Combine Dry Ingredients: In a small bowl, whisk together the rolled oats, flour, baking soda, cinnamon, and salt. Set aside.

      Cream Butter and Sugars: In a large mixing bowl, beat the softened butter, brown sugar, and granulated sugar with an electric mixer on medium speed until light and fluffy, about 2-3 minutes.

        Add Egg and Vanilla: Add the egg and vanilla extract to the butter mixture. Beat until well combined.
