Cheesy Zucchini Fritters

2 medium zucchinis, grated (about 2 cups)

1 teaspoon salt

1/4 cup all-purpose flour (or gluten-free flour if desired)

1/2 cup grated Parmesan cheese

1/2 cup shredded mozzarella cheese

1 large egg

2 green onions, finely chopped

2 cloves garlic, minced

1/4 teaspoon black pepper

1/4 teaspoon paprika (optional, for a smoky flavor)

Olive oil or vegetable oil, for frying

Sour cream or Greek yogurt, for serving (optional)

Instructions
 

Prepping the Zucchini: Start by grating the zucchinis using a box grater. Place the grated zucchini in a clean kitchen towel or cheesecloth and sprinkle with 1 teaspoon of salt. Let it sit for about 10-15 minutes to draw out excess moisture. After this time, squeeze the zucchini in the towel to remove as much liquid as possible.

    Combine Ingredients: In a large mixing bowl, combine the drained grated zucchini, flour, Parmesan cheese, mozzarella cheese, egg, chopped green onions, minced garlic, black pepper, and paprika if using. Mix until well combined. The mixture should hold together; if it feels too wet, add a little more flour.

      Heat the Oil: In a large skillet, heat about 2 tablespoons of olive oil over medium heat. Ensure the oil is hot but not smoking.

        Form the Fritters: Using your hands or a spoon, scoop about 2 tablespoons of the mixture and form patties (fritters). Gently flatten them to about 1/2 inch thick.

          Cook the Fritters: Place the fritters in the hot skillet, making sure not to overcrowd the pan. Fry for about 3-4 minutes on each side, or until golden brown and crispy. You may need to work in batches, adding more oil as necessary.

            Drain and Serve: Once cooked, transfer the fritters to a paper towel-lined plate to drain excess oil. Serve warm, either as an appetizer or a side dish, with a dollop of sour cream or Greek yogurt if desired.
