Cheesy Turkey Spinach Stuffed Shells

12 large pasta shells

1 pound ground turkey

2 cups fresh spinach, chopped

1 cup ricotta cheese

1 cup mozzarella cheese, shredded

½ cup Parmesan cheese, grated

2 cloves garlic, minced

1 teaspoon Italian seasoning

Salt and pepper to taste

2 cups marinara sauce

1 tablespoon olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Pasta Shells: Bring a large pot of salted water to a boil. Cook the pasta shells according to the package instructions until al dente. Drain and set aside to cool.

      Prepare the Filling: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Add the ground turkey, Italian seasoning, salt, and pepper. Cook until the turkey is browned and fully cooked, about 6-8 minutes.

        Add Spinach: Stir in the chopped spinach and cook until wilted, about 2 minutes. Remove from heat.

          Mix the Cheeses: In a mixing bowl, combine the cooked turkey and spinach mixture with ricotta cheese, half of the mozzarella cheese, and half of the Parmesan cheese. Mix well until all ingredients are well combined.

            Stuff the Shells: Take one pasta shell and carefully fill it with the cheesy turkey and spinach mixture. Repeat this process until all shells are filled.

              Prepare the Baking Dish: In a 9x13 inch baking dish, spread a layer (about 1 cup) of marinara sauce on the bottom. Place the stuffed shells in the dish, open side up.

                Add Marinara Sauce and Cheese: Pour the remaining marinara sauce over the stuffed shells. Sprinkle the remaining mozzarella and Parmesan cheeses on top.

                  Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.

                    Garnish and Serve: Once baked, remove from oven and let it cool for a few minutes. Garnish with chopped fresh parsley before serving.
