Cheesy Turkey and Quinoa Stuffed Peppers

4 large bell peppers (any color)

1 cup quinoa, rinsed

2 cups chicken or vegetable broth

1 pound ground turkey

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon cumin

1 teaspoon paprika

Salt and pepper to taste

1 cup canned diced tomatoes (with juice)

1 cup black beans, rinsed and drained

1 cup corn (frozen or canned)

1 ½ cups shredded cheese (cheddar or a blend)

Fresh cilantro or parsley for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Quinoa: In a medium saucepan, combine rinsed quinoa and chicken broth. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes, or until the quinoa is fluffy and the liquid is absorbed. Remove from heat and set aside.

      Prepare the Peppers: While the quinoa is cooking, slice the tops off the bell peppers and remove the seeds. Place the peppers upright in a baking dish.

        Cook the Turkey: In a large skillet over medium heat, add a splash of olive oil. Sauté the chopped onion and minced garlic until translucent, about 3-4 minutes. Add the ground turkey, breaking it apart with a spatula, and cook until browned and fully cooked, about 5-7 minutes.

          Combine Filling Ingredients: To the skillet with the cooked turkey, add the cooked quinoa, diced tomatoes, black beans, corn, cumin, paprika, salt, and pepper. Stir until everything is well combined and heated through (about 3-4 minutes). Remove from heat.

            Stuff the Peppers: Spoon the turkey and quinoa mixture into each bell pepper, packing slightly. Make sure to fill each pepper to the top.
