Cheesy Tomato Basil Rice Skillet

1 cup jasmine or basmati rice

2 cups vegetable broth (or chicken broth)

1 can (14.5 oz) diced tomatoes, drained

1/2 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 medium onion, finely chopped

2 cloves garlic, minced

1 teaspoon dried basil (or 1 tablespoon fresh basil, chopped)

1 teaspoon dried oregano

2 tablespoons olive oil

Salt and pepper to taste

Fresh basil leaves for garnish

Instructions
 

Sauté Vegetables: In a large skillet, heat olive oil over medium heat. Add the chopped onions and sauté until they become translucent, about 3-4 minutes. Add the minced garlic and cook for an additional minute, stirring frequently to avoid burning.

    Toast the Rice: Sprinkle the rice into the skillet and stir to coat the grains with the oil and vegetable mixture. Cook for about 1-2 minutes until the rice is slightly toasted.

      Add Liquids & Seasoning: Pour in the vegetable broth and add the drained diced tomatoes, dried basil, oregano, and a pinch of salt and pepper. Stir well to combine.

        Simmer the Rice: Bring the mixture to a boil, then reduce the heat to low. Cover the skillet and let it simmer for about 15-20 minutes, or until the rice is tender and has absorbed most of the liquid. Check occasionally to ensure it’s not sticking to the bottom of the skillet.

          Add Cheese: Once the rice is cooked, remove the skillet from heat. Stir in the shredded mozzarella and grated Parmesan cheese until melted and evenly distributed.
